I need to get a copy of all incoming & outgoing messages
We currently have an employee that is suspected of questionable business. I
am needing to get a copy of all incoming and outgoing messages without that employee's knowledge sent to my email address also. Can you please tell me the easiest way to go about this?

This is actually a programming forum, BTW.
The best way to do this - and without the users knowledge - is to turn on the Journaling feature in Exchange.
