Default create a drop down in outlook mask

I would like to know if it is possible to define a ones own mask. We would
like to use outlook not only for reciving/sending emails but also like
contact administration for all the colleagues.

So we would like to create a mask, where we can introduce the:
name, last name, company name, field of activity, country, region,
subsidiary, tel. work, cell phone number, email, fax, customer number,
address and category.

moreover, the fiel country, region, subsidiary, category and field of
activity should be in a drop down list, so our customers can not write
whatever they want, and have to choose between all the possibilities qe gave
them.
can somebody help me?
