How do I assign and reassign categories using real, grown-up words rather
than colors? I want to be able to assign a contact to a named category, not
a pretty color category. I would like to eliminate the whole color scheme.

You don't have to use colors. Just create categories, and don't assign a
color.

If you don't like "Red Category", edit the category's name to what you'd like.
