Is there a way to change the default delivery options to implement a default
reply to email ?

Default How to change the Delivery options for new messages

I couldn't figure out from the link. I would like to set default delivery
options to enable reply to functionality.

The Reply To address is set in the account settings for a POP3 or IMAP4 account. For an Exchange account, talk to your administrator.

I have access to Exchange administration. Can you tell me how to do this?

Modify the email address settings for the user to set a different default address.

FYI, there is a good forum for Exchange client/user management -- microsoft.public.exchange.clients.
