Default I HATE MICROSOFT OUTLOOK 2003 - HOW CAN I REVERT BACK TO 2000?

Please somehow reconfigure outlook to allow the user to choose how we want it
set up. I hate the way it is now. It is difficult to understand and not
efficient like the 2000 version. I could find what I wanted when I wanted it.
It is too complicated. For the price I paid I should have options available
