Do not start Outlook. If it is already going, close it and use Task Manager
to make sure it is gone (i.e., no "OUTLOOK.EXE" on the Processes tab). Then
start the Mail applet in Control Panel and click E-mail Accounts, then Next.
You should see the Exchange account there. Select it, click Remove, and add
the account you want, if you haven't done so already.

Default Cannot open default email folders

A question with a similar issue.

I have (unsuccessfully) tried to set up my work exchange account with
Outlook 2007 (it was an exchange server). Unfortunately, now that I have
given up, I cannot access E-mail Accounts. I run Mail Setup (with outlook
closed down completely), and when I click on "E-Mail accounts", the computer
simply ignores the request.

Does anyone know how to manually delete E-mail accounts, as Outlook
continues to freeze for a moment when it starts up, even though I have
disabled automatic "send/receive" E-mail?

You could remove the mail profile in the Registry. The accounts live there.
For Windows XP, it would be in
HKCU\Software\Microsoft\Windows NT\CurrentVersion\Windows Messaging
Subsystem\Profiles
