When I receive an e-mail with an attachment that has a bunch of addresses,
how do I delete them before forwarding?

Click forward on the message, then in the TO or CC fields (wherever), just
select & delete the addresses.

Might encourage those who send out mass mail to you to use the BCC field so
the recipient addresses are not exposed....some bright soul will invariably
click "Reply to All", and personally, I like to treat e-mail addresses as I
would unlisted phone numbers: nobody sees anybody else's.
