Default Outlook & Exchange 2003 Permissions

Just incase I missed this resolution....

I have an issue where I need to give access to an assistant to only ONE
subfolder in her managers mailbox/inbox (out of 50 ) and a few Contact
lists.

Can anybody let me know how to? I know how set permissions per folder,
but when I give acces through the server........you can see all of the
subfolders.

Any suggestions?
