Default reading user defined fields using exchange web services

A custom form is designed using Message (Note) Template with user defined
fields to gather inputs. This form is sent to a specific email account. In
this specific user account mailbox, using Exchange Web Services, how could
this user defined field values be read form the email item.

You'll probably receive a faster and better answer in an Exchange
