A form that I created always sets "Have replies sent to:" in the "Message
Options" settings with today's date stamp. This requires to user to either go
in and uncheck this setting or go through several dialogs to delete the date
stamp prior to sending the form.

How do you change tis seting for the entire form?

Simplest method: Run the form, change the setting, republish the form using the same message class.

Please be specific about what "didn't work" means. Are you saying that the same behavior occur? If so,have you looked at the code behind the form?
