Default How do I remove the 'default' Outlook Address Book?

My ultimate goal here is to sync with my iPhone via iTunes - is there a
way
to have the iTunes/iPhone read/sync with the ACT! contacts through
Outlook
(without a third party app)?

You won't be able to achieve this. iTunes syncs only with the Contacts
folder in your mail profile, as far as I can tell.
