I can see my contacts and calendar events in the view of these sections, but
if I open an existing contact/event or try to create a new contact/event I am
not able to type in any of the fields and most of the menu commands are
greyed out. Does anyone have a solution?

Not without knowing what steps were used to create the problem. For the
record, Outlook does not just stop doing this all by itself for no reason as
you imply. Provide the rest of the story, using standard newsgroup
