option not show any customer list under category view by default
 
It is very inconvenient to go to category and have to scroll through hundreds
of names to get to the category you want. It will remember until a search is
done. After a search, all categories open up and show all listings
underneath.

It will be better if there is a way to get Outlook to default to not showing
any customer listings underneath category listings

Have you tried the View | Expand/Collapse Groups | Collapse All Groups command? Another solution, if you need to view the same category often, is to create a new named view filtered to show only that category.
