I want to transfer signatures from my old machine (Outlook 2007 on a Vista
machine) to my new computer but am unable to locate the signatures
file/folder. Any idea where this is stored?

%AppData%\Microsoft\Signatures, both on XP and on Vista.

You're wrong. The AppData environment variable already contains "roaming".
