Default saving email addresses from incoming Outlook mail

I have recently switched from Outlook Express to Outlook (XP). I am trying to
figure out how to set up Outlook so that it automatically saves incoming
email addresses for me so that I don't have to manually add new contacts to
my contact list. I used to have this capability with Outlook Express and
really miss it.
