Create new user folders and put emails in there instead of the default folders

Right click on Personal Folders on the left side in OL and select New Folder. Give it a name

There are no folders (directories) or files in Outlook. That is a
hierarchical representation of how the data is stored in the maibox on
the Exchange mail server or in the .pst file (which is just a file).
All the mail is in the .pst file (a file, not a directory structure of
files). Folders and items in Outlook are only to show organization.

If you want to save items *outside* of Outlook then you will have to
export them.
