Default Category Color Changes Automatically

I have set all appointments to a specific category and color. Each time that
my calendar updates with the Enterprise Server some of my category
assignments (with colors) go away. Is there anything I can do to keep my
categories?

They should stick unless the admin is pushing colors out. Which version of
Outlook?
