Default "Date Created" section to date stamp when appointments were made

I would like a section where the date the entry was posted would be time/date
stamped for future reference.
ie: an appointment was made, then you later want to recall the exact date
you were speaking with a client when the appointment was made, you could
recall the appointment and it would stated that the info was entered on "such
a date", thus giving you the ability to track events at a later time.

Every item in Outlook has a "Date Created" value. Just display it. You'll
need a table view, however.
