Default Outlook; setting time for end of activity should not change date.

your problem is not with Outlook or Microsoft but rather with Dell - they
install an add-in that breaks the way Outlook handles meetings. You will
find MANY posts here where someone describes a similar problem and is
immediately asked " do you have a new Dell". Read some of those for the
exact method to remove the nasty little piece of software that cuses your
problem.
