Default IMAP Trash Showing/Not Showing

The Junk E-mail folder is Outlook's addition. It shouldn't get created on
the server side unless a message gets placed in it. At least that's how it
works for me.

If this happened to me, I'd enable diagnostic logging and see if I can spot
an issue.
