Contact linking is available in both programs, just not with drag-and-drop.You also have an extra one-time step in OUtlook 2007: You will need to turn on the Contacts box for linking items to contacts -- Tools | Options | Contact Options | Show Contact Activity Information on All Forms.
At the bottom of an open appointment, you will then be able to type in the name of a contact or click the Contacts button to select one.

I still don't understand why Outlook Contacts can't be associated with
appointments.
I want to either drag and drop or choose a contact some how ... and
that contact is easily visible on my schedule.
Any suggestions ?
I am using both outlook 2003 and 2007 - neither of which has this
*BASIC* need. crazy.
