I would like to also add the user that I want this appointment to go
to. So I was wondering if is was possbile to add an outlook
appointment with automation to another users outlook calendar or
atleast send them the request. The same would apply to the task
reminder.

If you have Write access to the other person's Calendar folder, you can create an appointment directly there, using the technique shown at http://www.outlookcode.com/codedetail.aspx?id=43
