I need to remove Scheduling and Tracking from the menu item.

How to Remove Scheduling and Tracking on the Custom Meeting Form
 
On a custom form, you can show/hide pages by selecting the page and then
toggling the Display This Page command. If you need further assistance with
this, give your version of Outlook.
