Delete history of "send to" names
 

In new message, you start typing the name of the contact. Usually a list
pops up of names to whom you send e-mails to in the past.

How does one clear this history?

Delete history of "send to" names
 

Remove individual addresses from the autocompletion cache by highlighting
the entry when presented in the suggested names list (use your arrow key to
migrate to the entry) and then hitting your Delete key before you tab out of
the field.
