Categories for contacts vs. categories for mail
 
Is there a way, when I assign categories to contacts,that I can later filter
out all mail to/from that contacts category in the search folders.

Later on, when I add new contact and assign him one of the existing
categories, all mail from/to him will be automatically filtered also.

No. You need to assign the same categories to the e-mails.
