I want to send my vcard to many people, but I do not want them to see all the
emails I have sent by clicking on the Activity tab. How do I stop this logging? |

No need to. It will never transfer. It is a dynamically created list unique

I've sent 3 test emails to myself at Yahoo & Google & my sent email activity

State your steps to repro.

1. By attaching my vcard to an email signature, or
2. By manually attaching the vcard file to the Outlook email, it happens. I'll send a test to your gmail account. VCF attachments received. Behaving as expected. Activities Tab completely
