How do I mark specific contacts as unread?
 
In old office I used to be able to mark contacts as read or unread easily.
How do I mark them as unread now?

How are we supposed to know what version you were using before and what
version you are using now? We can't read minds.
That option applies to messages. Not sure why or how you would use it for
Contacts.

OK,

I was using Office 2000 now I'm in Office 2007.
It also applied to contacts and I used it to sort/manipulate the contacts
temporarily.
If (in the older version) you right clicked on the contact if gave you the
same options as messages. (mark as read/unread). But now I only have one
option (mark as read). That won't do. At least for what I need the contacts
to do.

How do I mark specific contacts as unread?
 
They cleaned up the context menus in Outlook 2007 to make them more
realistic and relevant for the type of Outlook Item to which they are
applied. Since "read" and "unread" is not relevant for Contacts, it doesn't
exist. It exists for messages.
There are ample settings you can apply to Contacts that should permit you to
do whatever you need. I still don't see where you find an option to mark a
Contact as "read." I see no such option.
