Can I permanently change the default "display as" under email

When I enter the email address in a contact form, the next field, "Display
as", shows the full name and email address. I want to change the default so
it only shows the name. I'd also like to accomplish this with my existing
contact folders. Can this be done?

No. You must each field individually.
