in To field?

Replies use the format the sender chose. What purpose is there in changing
that?

=Purpose is: user previously saw both 'DisplayName' and 'Email addr' on
OUtlook 2003 , before server migration of db to new Exchange db.
USer has the sender in his 'COntacts' folder, sees email in Inbox with full
detail in header 'FROM'; when he now hits reply, only sees 'DISPLAYNAME' info
, not underlying email add detail, as he used to. USers want 'what they
had'..I can't seem to see what changed; I didn't re-install Outlook on
desktop, but somehow settings got flushed from server.

Doesn't sound like an Outlook issue. Ask in an Exchange group.
