That's not possible. Word is not the default editor. It's the only editor.

Default How to disable word as editor in outlook 2007?

I just installed the trial version of MS Office 2007 (and assumed that
Outlook would be updated too) but now when I hit the "NEW" button to type an
email, I get the message that MS word can't be used and another editor will
be opened. but THAT editor doesn't even have a SEND button on it and so I
have a bunch of drafts waiting to be sent!!! HELP!!

The symptoms suggest you're still looking at the earlier version of Outlook but no longer have the matching version of Word installed. Sounds like you did not remove the earlier version of Outlook so you could install Outlook 2007. That's the required sequence of installation steps.

Default How to disable word as editor in outlook 2007?

Well, I just downloaded the TRIAL version of the new Office, looking to check
out the MS Access2007 program someone recommended to me. I would not want to
uninstall any existing programs because I don't know if i will buy the new
one yet! but now I cannot use my Outlook2002!!! there must be a way around
this, or let me know how to uninstall the TRIAL version... =( Thanks!!!

You can use the Tools | Options | Mail Format command in Outlook 2002 to turn off the option to use Word as the editor. You can also uninstall the entire trial version as you would any other application-- through Control Panel | Add/Remove Programs.
