I found the resolution in Ofice Help (not located in help where it should of
been)..
so..
Step 1. Go to Help Menu
Step 2. Click on About Microsoft Office Outlook
Step 3. Click on Disabled Items
Step 4. Now Enable Out Of Office

This should now work.....

Tried searching through support based on searches for Outlook 2003 and Out
