I'm looking to email a questioneer out that can be replied to in the same

And what version of Office are you using? Access 2007 + Outlook 2007 can do this nicely, but not earlier versions.

Then you probably ought to consider using a web-based survey tool if you want to be able to easily tabulate the results.
