How do I automatically save incoming contact details?

When I right click, there is not an "Add to Contacts" in the drop down menu.
Can you think of a reason why?

Everyone is correct. You can't automatically save email addresses. However,
you may try opening the email, highlighting the picture to the email
address's left, or the address/name itself, and right clicking. Toward the
bottom of the drop down list is a an option to "Add to Contacts." Select that
option. A contact screen will open, displaying the name and email address of
the sender.

This will at least elimate some of the steps associated with adding addresses.

What are you right-clicking on?
Open a message
Right-click on the sender's name/address

You ought to see 'add to contacts'.
