I have a trial of 2007 and want to see how it interfaces with exchange server
that is offsite. if it has issues how will i uninstall and revert back to 2003

the best option is testing it in a virtual machine - either virtual pc from
ms or vmware from vmware.com or on a separate machine. if these are not
possible, an image (ghost or true image) made before you install it is the
best option. System restore may not properly undo any changes.
