I have 2 mail profiles and get prompted when Outlook starts.
Is there a way to rename the profiles?

You could rename the profiles directly in the registry, but why? If there are
problems in a mail profile, copying it to a new one will likely copy the
problems as well. Why do you need new names?

The first group I created / imported is called "Outlook", not very
descriptive, but was there by default.
It seems pretty weak that I cannot just rename them.

I am going to have 3-4 of these and want to name them properly.

If I copy a prfile does all the email and settings go with it?

Before you ask, why 3-4, I have 3 businesses and want each to have there own
profile.

Why not create them with the names you want from the outset?

If I copy a prfile does all the email and settings go with it?

The account definitions should go with it, but the passwords likely will need
resetting.

The profile named "Outlook" was created automatically.... when I converted
from outlook express...
I did not have a choice.
