Change e-mail address for an Identity?
 
Am I correct in concluding that the only way of changing an Identity's
e-mail address is construct a new one?

Change e-mail address for an Identity?
 
One identity can use multiple mail _accounts_ . Each account can have
different mail address. In order to change your e-mail address go to
Tools - Accounts - Mail, double click

And, you can delete an existing account, leaving none, and then add a new
account.
