We use Outlook 2007. I am looking for a way to transfer a meeting to another
user's calendar. In my team, we use the originating calendar to indicate the
host for the meeting. Currently, if the host changes, I have to delete the
old meeting from the original host's calendar and re-create it in the new
host's calendar to update all attendees.

Is there a way to just move the appointment and update all attendees?

No, you can't easily change the organizer.
