Is there a way to change the organizer of a reocurring meeting when the
organizer is no longer with our company?

No, you have to delete and create a new recurring item.

This can be done to a single event or whole calendar:
You have to use Text edits to an ICAL\VCAL file exported from outlook. Seek out the whole line where it says ORGANIZER: ever and change the address to something else. If it had other text there that looks like AD= and others like it, delete them. These are AD connections from the addressbook to your domain controller and are not needed. Now you just delete the events from old calendar. Before going any further, note that everybody just got the message about the events. You can delete this from an admin account if you wish, by opening their boxes and deleting the mail. Now you should open each account from their own local AD login, and open outlook, then go to options and set the Resource Handler (auto attendant) to on. Now just upload the ical file to whoever took over for the old person, write a vba to check the default calendar folder, processing each meeting event with a .send, and then sit back and watch the accept come in. Delete the messages after you mark them as read. Do the same in the other mailboxes (from an admin account or by opening them). Now go back and turn off the auto-attendant. Done.
