Actually, In the Work Week view, I can
see from 2 AM at the top to 10 PM at the bottom. You are certain this
cannot be changed so I only see 7am to 7pm?

Actually,. you see from 12 AM to 12 AM, with the work hours colored a little
differently to highlight them. The highlighting is controlled on
ToolsOptionsCalendar Options ("Start time" and "End time").

You are certain this
cannot be changed so I only see 7am to 7pm?

You cannot control the size of a day. In Outlook, a day is always 24 hours
long.
