Default Define user-defined fields in View?

I want to define a custom view. So, I go to View - Arrange By - Current
View - Customize Current View.
I want to define some user-defined fields. I go to Fields | Change
user-defined fields. It is empty. (duh)
How do I define some user-defined fields?

TIA
