Dan with a third-party tool you don't have to live with that. Category
Manager adds a sidebar with your categories; that works also for outgoing
emails. For details and the download see the link in my signature, please.

Outlook 2007 but when you are composing an Email you are actually using
Word 2007 as your editor and it does not have "Categorize".
