keyboard shortcut to insert a date
outlook 2007? press Alt to see the Alt+letters. For Date, it's Alt+N, D to
bring up the dialog.
or use a custom form:

(I use ActiveWords instead - it's a windows application that works in all
applications, not just outlook.)
