I was asking the steps you are using for creating the Contacts then
changing
the Display As field, what happens when you tab out of the field, and at
what point exactly the email display as field changes.

Well, SNAP! Yes I am Syncing, but I still don't know what's changing
it.
I'm using Outlook Connector and syncing with the address book on MSN,
but
there's no "display as" field on those records. If I make changes in
Outlook, as soon as I send/receive, they change back to default, but I
have
plenty of contact records that do hold the change. I have no idea
where
the
change is coming from.

Don't have any. The one that I'm experimenting with is a new
contact.
I've
never typed in her email address so there is no autocomplete...

Try clearing any autocompletion entries you have for those Contacts
who
refuse to change.

I'm using Outlook 2003. When I make changes to email display as
field,
some
take and some change back to default Full Name (email address).
I'm
only
using one computer and not syncing with any PDA's or any other
devices.
